1 Large Sweet potatoe - peeled & grated

1 Large zucchini - grated

1 Onion - finely diced

1 Egg or 1 Tbl of egg substitute

1/2 Cup of Spelt Flour

1/2 tsp Cumin

1 tsp Paprika

1 tbl Braggs

 

Combine all ingredients into a bowl and mix until well combined. 

Heat some coconut oil in a saucepan, drop large spoonfuls of the mixture into the pan, flatten and cook until crispy. 

Flip and cook the other side.  Serve with some wedges of tomato and avocado
