Banana & Apricot Pit

This is a delicious raw desert that everyone will love. You can add Mango for a slightly more summery flavor, or add lemon for a nice refreshing tangy taste. It keeps well in the freezer once made and is quick and easy - a family favorite of ours!

 

Ingredients

1 cup almonds soaked overnight- discard the water.

1 cup apricots soaked a couple of hours (an extra ½ cup for filling).

Process the almonds and apricots and spread in bottom of pie dish.


Filling

2 or 3 bananas.

½ cup coconut oil.

½ cup soaked apricots.


Process bananas, oil, and apricots in processor and pour into pie dish. Sprinkle with coconut and refrigerate or freeze for a couple of hours.


Depending on the fruits in season, there are some delicious alternatives to this recipe.


Variation #1- add texture by slicing 2 bananas and layering on top of pie base.

Variation #2- add juice of lemon and zest of lemon to pie filling

Variation #3- Use 1 or 2 bananas plus a large mango - heaven
