Steel Cut Oats

This is a much better alternative to rolled oats as the steel cut oats have been less processed and have maintained more of the husk and fibre which is important for good digestive health. To save time, prepare this the night before so all you have to do is warm it up.

Ingredients

1 handful of raw cashews
1 handful of chopped dates
½ apple or pear grated
1 cup steel cut oats
Cinnamon & honey to taste
Rice or soy milk.

Soak 1 cup of steel cut oats and raw cashews in 1½ cups of water overnight in a saucepan. The mixture will almost double in size.

Grate fresh apple or pear into the saucepan, adding  chopped dates and some cinnamon and honey to taste. Warm over a hot stove, there is no need to boil, and add rice or soy milk until you reach your desired consistency. Serve with a sprinkle of cinnamon – delicious!
